Dirty matcha freddo

4 minutes1 servingBy FREDDO ·

To make a dirty matcha freddo, whisk 2 g of matcha with a little hot water, pour it over 150 ml of cold milk and ice, and top it with a freddo espresso made from 18 g of finely ground FREDDO Espresso. It takes 4 minutes. The bottom of the glass holds an iced matcha latte; on top sits the freddo espresso, a double espresso whipped with ice. It is called dirty because the espresso darkens the green matcha. Matcha tastes grassy and slightly sweet, while the espresso adds a bold, roasted note.

Ingredients

  • 18 g FREDDO Espresso, finely ground
  • 150 ml cold milk
  • 2 g matcha powder, about 1 teaspoon
  • 30 ml water, about 80 °C
  • 3 to 4 ice cubes for whipping
  • Fresh ice cubes for the glass

18 g of FREDDO Espresso: €0.52 per cup.

How do you make Dirty matcha freddo?

  1. Whisk the matcha with 30 ml of water at about 80 °C in a zigzag motion for at least 20 seconds, until there are no lumps.
  2. Fill a tall glass with fresh ice cubes, pour in 150 ml of cold milk and slowly pour the matcha over it.
  3. Pull a double espresso (60 ml), whip it with 3 to 4 ice cubes for 10 seconds in a frappé mixer and pour it over a spoon as the top layer.

Tips and variations

What is a dirty matcha?

A dirty matcha is a matcha latte, usually over ice, topped with a double espresso, built like a dirty chai, which is a chai latte with espresso. It is called dirty because the espresso darkens the bright green of the matcha. In a dirty matcha freddo the espresso is whipped with ice as for a freddo espresso and sits on top as a creamy layer. How hot should the water be for matcha?

About 80 °C, and whisk the matcha for at least 20 seconds. Water that is too hot makes matcha bitter, so let freshly boiled water stand for a few minutes. A milk frother works instead of a bamboo whisk. Sources: T2 Tea, Teatotal, Dallmayr

How do I get clean layers?

Pour the matcha slowly over the cold milk and add the whipped espresso gently at the end. Poured over the back of a spoon, the layers stay especially clean.

Sweet or unsweetened?

Stir sugar or syrup into the cold milk before adding the matcha. You can sweeten the espresso while whipping it, as for a freddo espresso.
